Chocolate Peanut Butter Banana Sammy and Smoothie

Ingredients:



2 Oroweat Whole Grain Honey Wheat Sandwich Thins
4 Tablespoons Chocolate PB2 (from http://www.bellplantation.com)

3 Tablespoons Water

dash of Pumpkin Pie Spice

1 Medium Banana - sliced rather thin

2 Tablespoons Sugar Free Maple flavor Syrup


Directions:

Make your "peanut butter " by starting with your chocolate PB2 and water in a small bowl. Add your dash of apple pie spice.


Create your sammy with your sammy-thin and PB2 mixture. Top with 1/2 of the banana slices and "drizzle" 1 tablesppon of syrup over the top.

and for More Peanut Butter Banana fun.. add a smoothie!!

Ingredients:



1 Packet of Weight Watchers Vanilla Smoothie mix

4 Tablespoon of Chocolate PB2 (from www.bellplantation.com)

dash of Pumpkin Pie Spice

2 Tablespoons Sugar Free Maple flavor Syrup

1 Medium Banana - cut into slices

8oz 8th Continent Fat Free Vanilla Soymilk

ice cubes - medium crushed



Directions:

Add all ingredients to a blender. Blend until think and smooth. Garnish with mint sprig.

Stuffed French Toast









 Ingredients:
8oz Fiber One Cottage Cheese
Dash of Vanilla Powder
1 teaspoon Lemon Zest

1 cup Egg Beaters
1/2 teaspoon Pumpkin Pie Spice


4 Oroweat Whole Wheat Sandwich Thins
8oz of fresh mixed berries (Strawberries, Blackberries, Blueberries)
Sugar Free Maple flavor Syrup
Non Stick Cooking Spray


Directions:
Make your "filling" by starting with your cottage cheese in a bowl. Using your immersion blender, blend until thick and creamy. Add vanilla powder, lemon zest and blend them in.

In a shallow container add egg beaters and a few tablespoons of water and pumpkin pie spice, stir with a fork.

Heat your non stick skillet and spray lightly with non stick cooking spray. Dip your sandwich thins into the egg mixture and then to the skillet. Brown on both sides.

Stuff 1/4 of the filling (less a dollop for the top) between two of the sandwich thins. Serve with berries on top and syrup on the side in a small serving dish. Add that remaining dollop of filling to the top. Enjoy!!

Eat in Eat Out ?? Subway's Egg White Ham Cheese Muffin Melt

Egg White, Ham and Cheese Muffin Melt

.. TMG style..









Ingredients:

1 Oroweat Double Fiber Muffin
2oz (3 slices) Deli Select Thin Sliced Smoked Ham
2 Egg Whites
1 Kraft Fat Free Sharp Cheddar Singles
Green Peppers (thinly sliced)
Red Onion (thinly sliced)
1 tsp Honey Mustard
Dash of Pepper
Dash of Mrs Dash Salt-free seasoning
Non Stick Cooking Spray

Directions:

Using Non Stick Cooking Spray lightly spray the inside of a microwaveable bowl. Add egg whites, add salt free seasoning and pepper. Microwave a full temp for one minute and again for 30-45 seconds. Remove. With muffin in half.. lightly spread honey mustard on muffin. Place Ham slices on top and place on a paper towel in the microwave for approximately 20 seconds. Remove and assemble sandwich with adding cheese slice and pepper and onion. The heat of the sandwich will melt the cheese.

ENJOY!!

Meet CONNIE... a dear dear friend

I will never forget the day I personally met Connie Pierce. The people at the Weight Watcher meeting where she was attending were in awe of her weight loss success, as well as I was as a visitor to this group. Following the meeting I had the opportunity to speak with her, and learn that she was still reaching towards her "goal" with already having lost over 160 pounds. Connie and I became email friends and stayed in contact for months through her final strides towards goal. On the day she weighed in "at goal" I revisted the group.. She did it!! Down over 180 pounds.. and it struck me as nearly unbelievable that between the two of us that day we were together down 300 pounds. total.....

Connie spoke right then of wanting to write a book and tell her story in hopes of being an inspiration to others that faced a similar road ahead. It was just months later that she told me her book had been published and would be available in just a few days. I ran home and ordered one of the very first copies.. I found this story more than inspiration.. it's a must read.. especially for those of us that think it just will never happen.

You HAVE TO meet Ruby...

Funny just the other day at Borders this bright and cheery book.. jumped into my hands. Just reading the back cover I knew this was the next book meant for me to read. Ruby a young beautiful "southern lady" tells her story of her journey in living in a world that doesn't fit.. the obese people of our country. Ruby started out her journey at over 716 pounds, and with the determination of herself and the support of her freinds and family she is some 400 pounds down and meeting each day with health and exercise to reach her goal and "Beat the Beast"!! Ruby's Diary - Reflections on All I've Lost and Gained is a must read. Ruby and her near and dear friends and nephew Jim can also be seen on Style Network in a TRUE LIFE reality show called Ruby.You will see the ups and downs and the emotional challenges that Ruby faces in a day to day life. Her determination to help others through her efforts is as uppermost as losing her weight and controlling her personal "beast". This is one you won't be able to put down.

I have found such admiration and morivation from Ruby and her love of life and her full determination to succeed in this weight loss journey.  She portrays the ups and downs, from the emotional highs of success to the difficult struggles and weeks without losses or even weeks with gains.  Our journeys ar all quite similar.  Get to know Ruby and join her inspirational "team".
